A flat monthly price stays the same whether you have a slow month or a record one. You can budget it a year ahead.
A share of sales, whether a percentage of online sales, of payment volume or of total revenue, starts small and grows with you. It can look cheaper on a vendor's pricing page and cost more in practice. The only way to know is to run your own numbers.
